Easy Chocolate Mousse

This delicious smooth, rich and easy chocolate mousse is super quick to make. Chocolate mousse makes a great healthy chocolate snack or you can dress it up with berries and nuts to serve to guests.

Serves: 4 | Prep Time: 00:05 | Cooking Time: 00:00 | *Plus setting time

Ingredients

80g of 85% dark chocolate (organic), broken into pieces
270ml can coconut cream, a thick brand like Ayam
3 Tbsp maple syrup, 100%, or to taste
1 1/2 Tbsp cacao raw powder
2 tsp vanilla extract (organic)
1 tsp cinnamon
1/8 tsp fine sea salt

Directions

Melt the chocolate in a double saucepan or use the defrost setting on a microwave to melt without burning the chocolate.

Add the coconut cream, maple syrup, cacao powder, vanilla, cinnamon, salt and melted chocolate to a blender. Blend on medium speed for 10 seconds, then scrape down the sides of the jug. Blend for a further 6 – 8 seconds on high speed.

Pour evenly between 4 mini jars or glasses and place in the fridge to set.

Serve topped with berries, nuts or coconut yoghurt and add a sprinkling of grated dark chocolate on top.
